INGREDIENTS:
3-4 green onions, as desired
1 to 1 1/2 c of frozen peas and carrots
4 large eggs
1 1/2 tablespoons, plus 1 teaspoon of toasted sesame oil, 1 teaspoon for egg scramble pan, 1/2 tablespoon for sauteing veggies, and 1 tablespoon seasoning rice
4 cups cooled cooked rice
1-2 tablespoons soy sauce or tamari sauce
1-2 tablespoons of coconut aminos
DIRECTIONS:
- Wash and finely chop the green onions. Separate the white from the the green, this can be optional. Or you can just keep it all together.
- Lightly beat the eggs, add a teaspoon of the sesame oil to your pan, bring to low-medium heat, and pour in the eggs. Stir until just cooked/scrambled, place on a plate to cool.
- Add 1 tablespoon sesame oil to a large pot, heat to medium-high heat once the oil is hot add the white of the onion, the frozen peas and carrots, stir for a few minutes sauteing the veggies.
- Fluff up the rice with a fork and add it to the pot. Drizzle 1 tablespoon of sesame oil over the rice. Fluff up the rice as much as possible, again. You don’t want big clumps.
- Add the coconut aminos and soy or tamari sauce, stir everything well.
- Taste it! You may want to add more sauce. The coconut aminos provides a sweet flavor were as the tamari or soy sauce provide a saltiness to the dish.
- Toss in the scrambled eggs and green onions, stir, stir. Taste…done.
Again, and I will repeat this probably with each recipe. Make this recipe your own, your personal tastes are most likely very different to mine. Add, subtract, substitute, ingredients,… whatever it needs for you to enjoy it!
